Each wizard has one color assigned to him and he can only control things of this particular color. For example, wizard of brown has power over bark and clay things while for wizard of yellow it's bright fire and golden things. The restrictions/rules so far:
1. It's only control, not creation. So no fireballs for wizard of red until he creates fire of some sort.
2. Wizard can only affect thing that he sees directly, so no brain squishing for wizards of gray. Spyglasses and mirrors are fair game. Distance matters; to stop the raincloud you need a couple of wizards of dark gray, and to move the moon a smallest bit it's like thousand of wizards of white.
3. "As it is seen." As like, in a room with a red stained glass wizard of red gets control over more things, and in a completely dark room wizard of black can control everything! Paint can be used too, but when affected by magic it wears off much, much faster as "natural" colors oppose the magic.

How will the world look like? Which colors will be the strongest, the weakest and the most useful? So far the weakest one I could think about is wizard of purple because he's stuck with grapes and plums.

Purple being such a never seen and so useless color, every non-mage would try to use purple material as anti-mage material, so every weapon would be purple. Then Mages of purple would naturally become useful.

The fact that a non-colored thing cannot exist makes automatically every mage useful. The apparently less common color would become more common especially because of their rarity, and so, after a while, the entire world would look like a rainbow.

Ultimately, the only true limit of mages in this paradigm is the only-one-color-controled-at-a-time rule. A thing constantly changing its color couldn't be controled for long and would be practically immune to magic.

What sounds more useful would be a different definition - Only slightly different, but an important one.

"Magic is the manipulation of things As They Seem, rather than As They Are."

This would let you do things like bend space because the distance looks less or more than it is, or walk through a picture of a door because it looks like a door.

However, before a Wizard can use his magic first he has to slap Reality in the face and make it his bitch. Basically, he has to "convince" the world that everything is as it looks, and he does this by using "preparation" magic to make physics start to get wonky.

For instance, if he was to paint a brown dot and say that it's a portal to another world, then he'd first have to infuse it with magic and "convince" the world that it's Brown through-and-through before he can properly manipulate it: In reality it's brown paint over, say, concrete, but when the Magician is done with his Prep-phase, it becomes ACTUALLY brown all the way through.

That takes care of the problem with things being the wrong color, and explains a lot about why rituals and the pre-magical prep work are so necessary. Most of Magic is actually just preparing reality holes ahead of time, and Wizard's Duels are a lot like two people trying to ascertain who's version of reality is really real.

There aren't many things that are truly clear, though they may appear so to us in certain circumstances e.g. water is blue, glass is green but both appear clear in small amounts, or from certain angles.

Basically, Pink light is a mixture of Red light and Magenta light, which exist on opposite sides of the light spectrum. I did misremember Turquoise though, that is a real color.

What if only the color-blind could become color mages? They are born only being able to see certain colors, so a salmon mage can only see salmon. As they "lvl up" they begin to be able to see more colors. The black mage would be blind, and be completely ok with the world being pitch black.

Here's an idea: when an infant displays potential for magic (how? loldunno), he is brought to the wizard clan/guild of the matching color. There, the child and his peers learn of the magical world of color.
Once the child comes of age, he must shed the name his parents gave him and journey to the Color Wheel to be given a new name - this one given by the Gods of Light themselves (Hong, Azul and Kijani). It will reflect what his color truly is. What HE truly is.
For example: Bradley Smythe becomes Burgundy Smythe of House Red.
